Quality of coffee is subjective, and personal preferences can vary. What might be considered high-quality to one person may not be the same for another. However, there is still some rules that can explain the coffee at bad taste. Therefore, it's a good idea to focus on single-origin coffee, since they have until standard of coffee beans.
As explained, single-origin coffee beans are hand-picked by farmers, and the farmers are mainly picking ripeness and good quality coffee berries. In Colombia, farmers are only picking ripeness coffee berries, and left the raw berries on the tree for 2 more weeks, since all coffee berries are actually having different growing time due to different reasons. Thus, different fields are having their standard of coffee berry picking, but they are basically sorting the size of green beans as below table, and picking “Supremo” and “Excelso” only.
